Benton & Franklin counties
The Benton-Franklin Health District is the lead agency in a collaborative effort to expand nutrition
education to food stamp recipients. The health district along with Headstart, ECEAP, the food stamp
office, community food distribution programs, schools, and other social service agencies work together
to reach as many families as possible. The project objectives include increasing the recipient's
knowledge about providing nutritious food for themselves and their families; increasing their food
resources through new shopping and money management skills; increasing their knowledge and
behaviors related to food safety, handling, and storage; and demonstrating their ability to select, buy,
and prepare appropriate foods to meet their nutritional needs. These objectives will be met by providing
nutrition education programs at various community sites that include information on the use of dietary
guidelines and the food guide pyramid, stretching food stamp dollars, shopping strategies, and
preparation of economical recipes. The project will be evaluated using a pre- and post-class test and 25
percent of the class participants will be surveyed to assess behavior change in a follow-up interview.
The project is funded by a federal grant that requires a 50 percent non-federal match.
